- Fresh Strawberries
- Lemon Juice
- White Chocolate Chips
I did use fresh strawberries and that isn’t ideal for all seasons. If you need to use frozen strawberries, that’s still going to work!
If you are using frozen strawberries use the same amount, soften them up in the microwave, then drain the excess fluid (as much as possible). Then, continue on as if they were fresh. This means you will still coat them in flour.
How to Prepare the Strawberries
I have a little trick for you. Working with fresh fruit in baking doesn’t always work out well. Sometimes the fruit is too heavy for the batter, and it falls to the bottom.
Alas! I have found a way to avoid this issue.
So, for this recipe you will chop the fresh strawberries into small diced squares and place in a bowl. To the same bowl add 2 teaspoons of flour and mix. By lightly coating the strawberries in flour some of their moisture is absorbed. This helps keep the strawberries dispersed throughout the batter!

Ingredients
- 1 and 1/2 Cups Fresh Strawberries Diced
- 1 and 1/2 Cups All Purpose Flour
- 2 Teaspoons All Purpose Flour
- 1/2 cup Sugar
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking powder
- 1/8 Teaspoon Salt
- 1/4 cup Vegetable Oil
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Lemon Juice
- 1 eggs
- 1/3 cup Milk
- 1/4 cup White Chocolate Chips
Instructions

Preheat oven to 400 degrees Fahrenheit. Heavily spray a muffin tin with non-stick spray.

Clean and dice strawberries. Add to a small bowl. Coat with 2 teaspoons flour.

In one bowl combine: 1 and 1/2 cups flour, sugar, baking soda, baking powder, and salt.

In a separate bowl combine: oil, vanilla extract, lemon juice, egg and milk.

Add the wet mixture into the bowl with the dry mixture.

Carefully add in strawberries and white chocolate chips. Don’t overmix.

Evenly disperse the mixture into muffin tins. Top with additional strawberries and white chocolate chips, if desired. Cook for 17-20 minutes. Enjoy!

- Allow muffins to cool before enjoying.
